Serves 2 – 4


125 g raw nuts
4 tbsp pumpkin seeds
5 – 6 chopped pitted dates
1 tbsp melted coconut oil

Process or blend nuts, seeds and dates together. Add melted coconut oil and process again to make a dough like mixture.

Press into a pie dish and chill in fridge for 2 – 3 hours.


Flesh of 3 ripe avocados
3 tbsp raw honey or 2 tablespoons agave nectar
Zest of 1 lime
Juice of 2 limes
1 tbsp melted coconut oil

Blend all ingredients together in a food processor or blender until smooth.
Pile mixture into pie crust and smooth top. Chill before serving.
This is a rich desert so a little goes a long way.

    • How nice to have your own tree, Becca. Avocados have great health benefits. They do add calories but you can add avocado to your diet without adding extra calories by replacing high-calorie foods with this healthy fruit instead.
