Healhy Baked Oats Recipe
Anna Glover, Good Food and Olive Magazines Senior Food Editor, and cookery writer and food stylist created this baked oats recipe.
I’ve slightly altered the recipe to include organic ingredients which is essential if you are detoxing and better for you even if you’re not.
Ingredients
Serves 4
- 100g organic porridge oats
- 1 tsp gluten free baking powder
- 1 organic banana, peeled and chopped
- 1 tbsp good quality maple syrup or organic honey
- 2 organic eggs
- Pinch of mixed spice or ground cinnamon
- 100g no added sugar chocolate chips
- Organic blueberries or raspberries, plus extra to serve
- Avocado oil for the ramekins
Instructions
- Preheat the oven to 180C/160C fan/gas 4 for oven-baked oats.
- Place the oats in a blender and pulse until they resemble flour. If you prefer, you can keep them a little more chunky.
- Add the baking powder, chopped banana, maple syrup or honey, eggs, mixed spice, or cinnamon to the blender and blitz until smooth.
- Lastly, stir in the chocolate chips or berries.
- Lightly oil oven proof the ramekins, then divide the batter between them.
- Bake the oat mixture for 20 to 25 minutes in the oven until well risen and the baked oats spring back when lightly pressed.
- Finally, scatter with more chocolate chips or berries before serving – they will melt into the top for a delicious melded flavour.
Once cooked, the oats will last in the fridge for three to four days and could also be frozen. They can be reheated in an oven.
