Dairy Kefir, has been consumed for it’s extensive health benefits in Balkan countries for thousands of years but coconut kefir is now being hailed as the latest superfood.

The health beverage is made by fermenting what are known as kefir “grains” containing a wide variety of beneficial bacteria and yeast in coconut water.

There are two forms of grains used during the fermentation process of kefir. This includes kefir grains from water and kefir grains from milk. Though appearing similar, Kefir grains derived from milk have a deeper whitish color unlike water kefir grains which are translucent.

Milk grains are used in the milk from goats, cow, camel, sheep, almond and soya. Water grains are used in mineral, well, spring or coconut water.
